Why we make good even better

We rescue valuable by-products and use them to make delicious and nutritious food for you. And we have good reason to do so!

Back in the old days of beer brewing, feeding by-products to livestock was the done thing. This isn’t really an option anymore due to all the restrictions in place now. So all those by-products head straight to the biogas plant.

Real responsibility

But because we started viewing our by-products as raw materials here at Brauerei Locher in Appenzell, this became a problem for us. We simply couldn’t accept that tonnes of useful by-products – and all the nutrients and fibre inside them – were just being wasted. Given our position right at the source, we strongly believed that we needed to respect our responsibility towards our planet and take a stand for sustainability. And we were right in that belief!

Scrumptious sustainability

Like busy worker bees we got straight to experimenting with new sustainable solutions to ultimately reduce the amount of food waste coming out of the brewing process. To give our by-products the value they deserve by feeding them back into the natural cycle as delicious food we could all enjoy. Pioneering stuff! We never lost sight of our goal. And we created products – like pizza and chips – that are genuinely sustainable but still taste incredible.

Passion project

Recycling our by-products made logical sense to us, but it meant more to us than just that. Led by our heads and our hearts, we set up brewbee as our own food upcycling brand. Because this is serious business! Buzzing about like “brewing bees” (that’s where the name “brewbee” comes from), we’re still working hard to come up with lots of innovative ideas for new products that are delicious and sustainable.
