brewbee Birrattone – for a sustainable take on panettone
Our brewbee Birrattone is inspired by the classic Italian panettone. But we decided to get creative and update the recipe ever so slightly to make it a bit more sustainable. The result is a delicious cake that’s golden on top and irresistibly soft and fluffy on the inside.

Classic
For our classic Birrattone with orange peel and raisins, we stick to a traditional recipe and method (almost, at least).

What makes brewbee Birrattone so light and airy?
As with all our brewbee products, our Birrattone is made by hand using by-products from the brewing processes. This is what gives it that deliciously distinctive flavour and lighter-than-air consistency.
The dough
The basic dough is made from wheat flour, beer, malted barley spent grain, Lievito Madre (a traditional Italian yeast starter), butter and egg yolk. After ten hours of proving, dried fruit, seasoning and Säntis Malt whiskey is added to the dough mixture.
The process
Once the dough has finished proving and risen nicely, our brewbee Birrattone needs to bake in the oven for around half an hour to give it the typical golden-brown colour.
